A convenient and delightful one-pan meal featuring fresh broccoli, savory chicken sausage, and cheesy tortellini, all roasted to perfection.

Ingredients

  • 1 1/2 lbs fresh broccoli, cut into florets
  • 3 cloves garlic, minced
  • 11 oz chicken sausage, sliced
  • 16 oz frozen cheese tortellini
  • 8 oz grated parmesan cheese
  • 6 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: red chili flakes for a hint of heat

Instructions

  1. Preheat your oven to 400ºF.
  2. Toss the broccoli florets with the minced garlic, 2 tablespoons of olive oil, salt, and pepper on a sheet pan. Spread them out evenly.
  3. Roast the broccoli in the oven for about 10 minutes, until it turns bright green but remains crisp.
  4. After 10 minutes, increase the oven temperature to 450ºF.
  5. In a large mixing bowl, combine the roasted broccoli with the sliced chicken sausage, frozen tortellini, the remaining olive oil, and half of the grated parmesan cheese.
  6. Prepare the sheet pan by adding a light coat of olive oil. Pour your mixture evenly over the pan.
  7. Bake for an additional 12-15 minutes, until everything is melted and golden brown.
  8. Sprinkle the remaining parmesan cheese on top before serving.

Notes

Consider adding red chili flakes for a spicy kick. Experiment with different vegetables for variations.
