A comforting and flavorful chicken fricassée simmered with shallots and crispy bacon, bringing family and friends together at the dinner table.

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 2 tablespoons olive oil
  • 4 shallots, sliced
  • 4 slices of bacon, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the grease in the pot.
  2. Season the chicken with salt and pepper, then brown in the same pot for about 5 minutes on each side. Once browned, remove the chicken and set aside.
  3. Add the sliced shallots to the pot and sauté until softened. Stir in the flour and cook for 1 minute; this creates the base for your sauce.
  4. Gradually pour in the chicken broth while stirring constantly to avoid lumps.
  5. Return the chicken and cooked bacon to the pot. Cover and simmer for 30 minutes or until the chicken is thoroughly cooked.
  6. Stir in the heavy cream and cook for an additional 5 minutes until heated through.
  7. Serve hot, garnished with fresh parsley.

Notes

For added flavor, consider using homemade chicken broth and feel free to experiment with vegetables or herbs like thyme.
