  • 1 cup diced tomatoes
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil.
  4. Stir in the fresh spinach and Italian seasoning, cooking for an additional 5 minutes.
  5. Season with salt and pepper to taste before serving.

Notes

For a thicker soup, let it simmer longer to reduce the liquid. Perfectly pair with crusty bread or a light salad.
