Instructions

  1. In a bowl, combine the feta cheese, chopped spinach, and sun-dried tomatoes. Mix well to create a flavorful filling.
  2. Place each chicken breast between two pieces of plastic wrap. Gently pound them to an even thickness, making them about 1/2 inch thick.
  3. Season the chicken breasts with salt and pepper, ensuring each piece is flavor-packed.
  4. Spoon the feta and spinach mixture onto each chicken breast, spreading it evenly across the surface.
  5. Carefully roll each chicken breast up tightly and secure using toothpicks or kitchen twine.
  6. Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken rolls for about 2-3 minutes on each side until they become golden brown and enticing.
  7. Once seared, transfer the skillet to the preheated oven. Bake the chicken for 15-20 minutes until fully cooked and the juices run clear.
  8. Remove from the oven, allowing it to rest for a few minutes. Take out toothpicks or twine and slice into medallions for serving.
