  • 4 chicken thighs
  • 2 cups mixed vegetables (bell peppers, carrots, zucchini)
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs (thyme, rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the chicken thighs and mixed vegetables in a large bowl.
  3. Drizzle with olive oil and season with salt, black pepper, and dried herbs.
  4. Peel the garlic cloves and add them to the bowl.
  5. Toss everything together until evenly coated.
  6. Spread the mixture in a single layer on a baking sheet.
  7. Roast in the oven for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. Serve hot.

Notes

For crispy chicken skin, ensure the chicken thighs are dry before seasoning. You can also broil the chicken for a couple of minutes at the end for extra crispiness.
