A flavorful and easy rice noodle stir-fry loaded with colorful vegetables and protein options, perfect for weeknight dinners.

  • 8 ounces rice noodles
  • 1 tablespoon vegetable oil
  • 1 cup protein of choice (chicken, shrimp, or tofu)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Cook the rice noodles according to the package instructions. Once they’re cooked, drain them and set them aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add your protein of choice and cook until browned and fully cooked through, about 5-7 minutes.
  4. Introduce the mixed vegetables and minced garlic. Stir constantly for about 3-4 minutes until the vegetables are tender yet crisp.
  5. Incorporate the cooked rice noodles into the skillet, followed by the soy sauce and oyster sauce (if using). Season with salt and pepper to taste.
  6. Toss everything together until well mixed and heated through.
  7. Serve hot, garnished with chopped green onions.

Notes

For best results, prep all ingredients ahead of time and avoid overcrowding the skillet during cooking.
