A creamy and flavorful classic potato salad perfect for summer picnics and family gatherings.

Ingredients

  • 6 medium potatoes (around 3 pounds)
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 4 hard-boiled eggs, peeled
  • 2 tablespoons white distilled vinegar
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons pickle relish
  • Salt and pepper to taste
  • 2 spring onions, sliced
  • 1 teaspoon paprika

Instructions

  1. Scrub, peel, and cut the potatoes into one-inch cubes.
  2. Place the potato cubes in a large pot and cover with water.
  3. Boil over medium-high heat for approximately 10 minutes or until firm-tender.
  4. Drain the potatoes and set aside to cool completely.
  5. In a large mixing bowl, combine the cooled potato cubes, chopped onions, and celery.
  6. Hard-boil the eggs, cool, and peel them. Either push through a cooling rack over the potato mixture or chop and add to the bowl.
  7. Prepare the dressing by mixing vinegar, mayonnaise, yellow mustard, and pickle relish; season with salt and pepper.
  8. Fold the dressing into the potato mixture until well combined.
  9. Garnish with sliced spring onions and a sprinkle of paprika.

Notes

For enhanced flavor, consider adding chopped fresh herbs or experimenting with different add-ins like diced pickles or bell peppers.
