A savory and sweet roasted chicken dish that combines fresh pineapple with a flavorful marinade for a delicious family meal.

  • 1 whole chicken (about 45 pounds)
  • 1 to 2 cups fresh pineapple, sliced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs (like cilantro or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, olive oil, salt, and pepper to prepare the marinade.
  3. Place the chicken in a shallow dish and pour the marinade over it, ensuring it is well-coated.
  4. Allow the chicken to marinate for about 30 minutes.
  5. Arrange the pineapple slices around and on top of the marinated chicken in the baking dish.
  6. Roast in the preheated oven for about 90 minutes, basting occasionally with pan juices.
  7. Check that the chicken’s internal temperature reaches 165°F (75°C), then remove it from the oven and let it rest for a few minutes before serving.

Notes

For a crispier skin, increase the oven temperature to 400°F (200°C) for the last 15-20 minutes while basting regularly. If using canned pineapple, drain well before adding to the dish.
