  • 2 cups cooked jasmine rice
  • 1 cup fresh pineapple, diced
  • 1/2 cup peas and carrots
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 cup cashews (optional)
  • 1 tablespoon fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Stir in the peas and carrots, cooking until tender, around 3 to 5 minutes.
  4. Add the cooked rice, soy sauce, and black pepper, mixing thoroughly.
  5. Fold in the diced pineapple and cashews, if using.
  6. Cook together for an additional 2-3 minutes until the pineapple warms.
  7. Garnish with chopped green onions and cilantro before serving.

Notes

To achieve the best texture, use day-old jasmine rice. Optionally, toast cashews for extra flavor and crunch.
