  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. In a pot, cook the rice according to package instructions.
  2. Heat olive oil in a pan over medium heat. Add the diced onions and bell pepper, cooking until softened.
  3. Add the diced chicken to the pan and cook until browned on all sides.
  4. Stir in the pineapple chunks and soy sauce, and cook for another 5 minutes until heated through.
