A delightful one-pan dish combining juicy chicken breast, tender jasmine rice, and sweet pineapple, seasoned with garlic and ginger.

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken cubes and cook until golden brown and thoroughly cooked. Remove the chicken and set aside.
  3. In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened.
  4. Stir in the cubed pineapple and cook for an additional 2 minutes.
  5. Add the jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring everything to a boil.
  6. Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes or until the rice is tender.
  7. Return the cooked chicken to the skillet, mixing well, and heat through.
  8. Serve garnished with sliced green onions and sesame seeds.

Notes

Taste as you go and adjust seasoning. For spicy variations, add red pepper flakes or hot sauce. Consider using brown rice for a heartier option.
