A simple yet mouthwatering dish featuring tender chicken and sweet pineapple, perfect for summer barbecues and family gatherings.

Ingredients

  • 1 ½ lbs boneless skinless chicken breast or thighs, cubed
  • 2 cups pineapple chunks, fresh or canned in juice
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the cubed chicken and lightly brown it on all sides.
  3. In a mixing bowl, stir together the soy sauce, brown sugar, minced garlic, cornstarch, and a splash of water.
  4. Once the chicken is browned, add the sauce mixture to the skillet.
  5. Fold in the pineapple chunks and allow the mixture to simmer.
  6. Cook until the chicken is fully cooked and the sauce thickens.

Notes

For added flavor, marinate the chicken in soy sauce for an hour before cooking. Consider adding crushed red pepper flakes for heat or sesame seeds for garnish.
