A vibrant dish combining tender chicken, colorful vegetables, and sweet pineapple served in hollowed pineapple halves.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 fresh pineapple, halved and hollowed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Soy sauce to taste
  • Olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic, onion, and bell pepper; sauté until soft.
  3. Stir in the cooked chicken and soy sauce; cook for 5 minutes.
  4. Fill the hollowed-out pineapple halves with the chicken mixture.
  5. Serve over cooked rice and garnish with cilantro.
