  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (Diced)
  • 1/4 cup Green Onions (Chopped)
  • Sesame seeds (For serving)
  • Crushed red pepper (Optional)

Instructions

  2. Heat the oil in a large skillet over medium-high heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add the chicken to the skillet and cook until nicely browned and cooked through, about 6-7 minutes.
  5. Pour the sauce mixture over the cooked chicken.
  6. Stir in the pineapple chunks and diced red bell pepper.
  7. Simmer the mixture for 5-7 minutes, allowing the sauce to thicken slightly.

Notes

For a spicier dish, add crushed red pepper flakes during the simmering stage. You can substitute chicken with tofu or tempeh for a vegetarian version.
