A quick and delightful dish that combines succulent chicken, vibrant vegetables, and sweet pineapple, perfect for cozy weeknight dinners.

  • 1 lb chicken breast
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • â…“ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped

Instructions

  1. In a large skillet, heat the olive or sesame oil over medium heat. Sauté the chicken breast until beautifully browned and fully cooked, about 6–8 minutes.
  2. While the chicken cooks, prepare the sauce in the same pan. Add freshly minced garlic and cook until fragrant (about 30 seconds). Pour in soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir to combine.
  3. To thicken the sauce, whisk the cornstarch and water mixture until smooth, then add it to the sauce in the pan. Cook for an additional minute until the sauce thickens.
  4. Return the chicken to the pan, add in the pineapple chunks and diced red bell pepper. Combine everything and allow the flavors to meld and the vegetables to soften slightly.
  5. Gently fold in the cooked rice until all is well-coated with the sauce. Serve warm, garnished with chopped green onions and optional toppings like sesame seeds or crushed red pepper.

Notes

For added depth, consider marinating the chicken briefly in soy sauce or pineapple juice before cooking. Feel free to use leftover rice to save time.
