Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • â…“ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped
  • Optional toppings: sesame seeds, crushed red pepper

Instructions

  1. Heat olive or sesame oil in a large pan over medium heat.
  2. Sauté the chicken until browned, about 5-7 minutes.
  3. In the same pan, add minced garlic and sauté for 1 minute.
  4. Pour in the soy sauce, pineapple juice, honey, and rice vinegar. Stir until well combined.
  5. Mix the cornstarch and water in a separate bowl until smooth, then add to the sauce. Continually stir until the sauce thickens.
  6. Return the chicken to the pan along with the pineapple chunks and diced red bell pepper.
  7. Gently fold in the cooked rice until fully incorporated.
  8. Serve warm, garnished with green onions and optional toppings.

Notes

For enhanced flavor, marinate chicken and use fresh pineapple if possible. Customize vegetables as desired.
