A delightful fusion of sweet pineapple, tender chicken, and vibrant mixed vegetables over a bed of fragrant jasmine rice, creating a comforting and celebratory meal.

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks
  • 1 cup mixed vegetables (bell peppers, carrots, peas)
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups jasmine rice
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Cook jasmine rice according to package instructions and set aside.
  2. In a large skillet, heat vegetable oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through.
  3. Add minced garlic and grated ginger to the skillet, cooking for an additional minute.
  4. Stir in the pineapple chunks and mixed vegetables, cooking until the vegetables are tender.
  5. Pour in the soy sauce and let everything simmer for 2-3 minutes until heated through.
  6. Serve the pineapple chicken over a bed of jasmine rice and garnish with chopped green onions.

Notes

For enhanced flavor, marinate the chicken in soy sauce and ginger for 15-30 minutes before cooking. Feel free to substitute pineapple with mango for variation.
