  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Soy sauce to taste
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion, bell pepper, and minced garlic. Sauté until softened.
  3. Add the chicken pieces, season with salt and pepper, and cook until browned.
  4. Stir in the rice, pineapple chunks, and chicken broth.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Taste and adjust seasoning with soy sauce.
  7. Serve hot.
