  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the cubed chicken breast and cook until golden brown and fully cooked, about 6-8 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Sauté until softened, about 3-4 minutes.
  4. Add cubed pineapple to the skillet and cook for an additional 2 minutes.
  5. Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 18-20 minutes, or until rice is fully cooked.
  7. Return the cooked chicken to the skillet, mixing well.
  8. Heat through for 2-3 minutes and serve topped with sliced green onions and sesame seeds for garnish.

Notes

Consider adding other vegetables like snow peas or carrots for added nutrition and color. Store leftovers in an airtight container in the refrigerator for up to three days.
