A crispy chicken cutlet dish featuring a savory Parmesan and breadcrumb crust, complemented by a rich creamy garlic sauce.

  • 4 thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese (for coating)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese (for sauce)
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Season each chicken cutlet with salt and pepper on both sides.
  2. Dredge each cutlet in flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off before coating it in the breadcrumb-Parmesan mixture.
  3. Heat olive oil in a skillet over medium heat. Once hot, place the coated chicken cutlets in the pan, cooking for 3 to 4 minutes per side until they turn golden brown and crisp.
  4. Transfer the chicken to a plate and set aside temporarily.
  5. Melt the butter in the same skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  6. Stir in the chicken broth, heavy cream, and the remaining grated Parmesan cheese. Allow the sauce to simmer, stirring regularly, until it thickens. Season to taste with salt and pepper.
  7. Return the crispy chicken cutlets to the skillet and spoon the creamy garlic sauce over the top. Allow them to bask in the sauce for a minute to soak up the flavors.
  8. Garnish with fresh parsley or thyme before serving.

Notes

For a well-rounded flavor, consider adding garlic powder, Italian herbs, or paprika to the flour. Serve with a side of mashed potatoes or a crisp salad.
