Crispy and juicy oven-fried chicken thighs, delivering classic comfort food flavors without the need for deep frying.

  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spray a large baking dish with nonstick spray or brush with olive oil.
  3. In a bowl, combine olive oil, garlic powder, smoked paprika, salt, pepper, and thyme. Rub this mixture over each chicken thigh.
  4. Coat each thigh in panko breadcrumbs until fully covered.
  5. Arrange the thighs skin-side up in the baking dish, ensuring they are spaced out.
  6. Bake for 35-40 minutes until golden brown and the internal temperature reaches at least 165°F (74°C).

Notes

For more flavor, consider marinating the chicken in the spice mixture for a few hours or overnight. Using a wire rack can aid in even cooking.
