Delicious and comforting oven baked chicken enchiladas made with rotisserie chicken and creamy filling.

Ingredients

  • 1 rotisserie chicken, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 packet taco seasoning
  • 1/2 cup chicken broth
  • 1 can diced green chiles
  • 8 tortillas (flour or corn)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Green onions, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together shredded rotisserie chicken, cream cheese, sour cream, taco seasoning, chicken broth, and diced green chiles until well combined.
  3. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
  4. Sprinkle cheese on top of the enchiladas.
  5. Bake in the preheated oven for about 20-25 minutes, or until heated through and the cheese is melted.
  6. Garnish with green onions before serving.

Notes

For added heat, consider adding diced jalapeños to the filling. You can also try different cheeses for varying flavors.
