  • 1 lb Italian sausage (sweet or spicy)
  • 16 oz broccoli florets
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 cups reserved pasta water
  • Grated Parmesan cheese (for topping)
  • Olive oil (for drizzling)
  • Red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook orecchiette pasta according to package directions, removing from heat 2 minutes before al dente.
  2. In a large skillet, heat olive oil over medium-high heat, add sausage, and cook until browned, about 5-6 minutes.
  3. Add chopped broccoli and minced garlic; cook until broccoli is tender, about 5-6 minutes, adding water if needed to steam.
  4. Drain pasta, reserving 2 cups of water, and add to the skillet with the sausage and broccoli.
  5. Mix in 1/2 cup of reserved pasta water and toss until the sauce is creamy, adding more water as needed.
  6. Serve hot, topping with Parmesan cheese, a drizzle of olive oil, salt, pepper, and red pepper flakes if desired.

Notes

For added brightness, consider a splash of lemon juice. Experiment with other greens like spinach or kale for variations.
