One Pot Creamy Parmesan Chicken Pasta

A creamy, cheesy pasta dish featuring tender chicken and rich sauce, all cooked in one pot for a comforting family meal.

  • 1 pound (450 g) chicken tenderloins or cutlets
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning, divided
  • 2 tablespoons shredded Parmesan cheese
  • 2 tablespoons all-purpose flour
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • ½ medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups chicken stock
  • ¾ cup half and half
  • 8 ounces (225 g) dried pasta (any shape works)
  • ¾ cup shredded Parmesan cheese

Instructions

  1. Begin by combining ½ teaspoon of Italian seasoning, salt, black pepper, 2 tablespoons of Parmesan cheese, and flour in a shallow dish. Coat the chicken evenly with this mixture or sprinkle it directly over the chicken.
  2. In a large Dutch oven or deep skillet, melt 1 tablespoon of butter with 1 teaspoon of olive oil over medium heat.
  3. Add the seasoned chicken to the pot and cook until golden and cooked through. Remove the chicken from the pot and keep it warm.
  4. In the same pot, add the remaining butter and olive oil. Sauté the onion for about 2 minutes until softened, then add the minced garlic. Cook for an additional minute until fragrant.
  5. Pour in ½ cup of chicken stock to deglaze the pot, scraping up any browned bits from the bottom.
  6. Stir the remaining chicken stock and half-and-half into the pot. Add the dried pasta, stirring to coat in the liquid.
  7. Bring to a boil, then reduce the heat, cover, and simmer for 11–13 minutes. Stir occasionally to achieve perfectly al dente pasta.
  8. Finally, stir in the remaining ½ teaspoon of Italian seasoning and ¾ cup of Parmesan cheese.
  9. Taste the mixture and adjust seasoning with salt and pepper as needed. Return the chicken to the pot and nestle it on top of the pasta or stir it in.

Notes

For maximum flavor, avoid overcrowding the chicken in the pan, and consider adding vegetables like spinach or peas for more nutrition.
