A quick and flavorful one-pan teriyaki chicken stir fry packed with chicken and colorful vegetables, perfect for a satisfying meal in under thirty minutes.

Ingredients

  • 1 pound of chicken breast, cut into bite-sized pieces
  • 2 cups of mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 1/4 cup of soy sauce
  • 2 tablespoons of honey
  • 1 tablespoon of sesame oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, minced
  • 1 tablespoon of cornstarch (optional for thickening)
  • Cooked rice or noodles for serving

Instructions

  1. Heat the sesame oil in a large skillet or pan over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and ginger, cooking for an additional minute.
  4. Pour in the soy sauce and honey, stirring to combine.
  5. If using cornstarch, mix it with a little water and add to the pan to thicken the sauce.
  6. Add the mixed vegetables and stir-fry everything together for another 3-5 minutes until the vegetables are tender but still crisp.
  7. Serve the stir fry over cooked rice or noodles.

Notes

For extra flavor, marinate the chicken in the soy sauce and honey mixture for about 30 minutes before cooking. Customize your stir fry with your favorite vegetables or protein.
