A simple and flavorful one-pan meal featuring tender chicken and perfectly roasted zucchini, ideal for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine olive oil, garlic powder, onion powder, paprika, salt, and pepper in a large bowl.
  3. Add the chicken breasts to the bowl and coat them well with the mixture.
  4. Place the coated chicken breasts on a baking sheet.
  5. Add the sliced zucchini around the chicken on the baking sheet.
  6. Drizzle any remaining olive oil mixture over the zucchini.
  7. Bake for 25–30 minutes, or until the chicken is cooked through and the zucchini is tender.
  8. Garnish with fresh parsley if desired and serve warm.
