Succulent chicken thighs marinated with zesty Old Bay seasoning and baked to perfection.

Ingredients

  • 6 chicken thighs
  • 1 ½ tablespoons Old Bay seasoning
  • 1 tablespoon tomato paste
  • 1 teaspoon garlic paste
  • 1 ½ teaspoons onion powder
  • ½ tablespoon dried parsley
  • 2 tablespoons avocado oil
  • Salt and black pepper to taste

Instructions

  1. In a bowl, combine the avocado oil, tomato paste, Old Bay seasoning, parsley, onion powder, garlic paste, salt, and black pepper. Mix until thoroughly combined.
  2. Trim off any hanging skin and excess fat from the chicken thighs. Transfer them to a separate bowl.
  3. Add the marinade to the chicken thighs and mix until well coated. For the best flavor, let them marinate for at least 30 minutes.
  4. Preheat your oven to 400°F (200°C). Arrange the chicken thighs in a baking dish, skin side down. Place the dish in the oven and bake for 20 minutes.
  5. Remove the dish, carefully flip the chicken thighs, and return them to the oven. Bake for another 15-20 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Transfer your cooked chicken thighs to a serving plate and let them rest for 5-10 minutes before serving.

Notes

Overnight marinating maximizes the infusion of spices for even deeper flavors.
