A comforting casserole featuring tender chicken breast and creamy rice, perfect for family gatherings and weeknight dinners.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (Brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water (use one of the soup cans)
  • 1 tablespoon butter
  • 1 envelope Lipton onion soup mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously butter a 9×13 baking pan with 1 tablespoon of butter.
  3. In a medium bowl, mix together the cream of mushroom soup, cream of chicken soup, one can of water, and Minute Rice until well combined.
  4. Pour the soup and rice mixture into the buttered baking pan.
  5. Arrange the boneless, skinless chicken breasts on top of the rice mixture.
  6. Sprinkle the Lipton onion soup mix evenly over the chicken breasts.
  7. Cover the baking pan with foil and place it in the preheated oven.
  8. Bake for approximately 1 to 1.5 hours, or until the chicken is cooked through and the rice is tender.

Notes

For added flavor, season chicken lightly with salt and pepper before layering. You can add vegetables like frozen peas or broccoli for extra nutrition.
