A comforting, easy-to-prepare dish combining chicken, creamy soups, and rice, perfect for busy weeknights.

Ingredients

  • 4 boneless (skinless) chicken breasts
  • 1 (10.5-oz) can unsalted cream of chicken soup
  • 1 (10.5-oz) can unsalted cream of mushroom soup
  • 2 cups chicken broth
  • 2 cups regular white rice (uncooked)
  • 1 package onion soup mix

Instructions

  1. Preheat your oven to 350ºF and lightly spray a 9x13x2-inch baking dish with cooking spray.
  2. In the baking dish, combine the cream of chicken soup, cream of mushroom soup, chicken broth, and uncooked white rice.
  3. Sprinkle the onion soup mix over the top and whisk until combined.
  4. Carefully place the chicken breasts on top of the mixture and cover tightly with foil.
  5. Bake for 1 hour 15 minutes to 1 hour 30 minutes, until chicken is fully cooked and rice is tender.
  6. Let it rest for a few minutes before serving, garnishing with fresh parsley or chives if desired.
