A vibrant and fresh salad featuring mixed greens, tuna, and a tangy vinaigrette, perfect for warm summer days.

Ingredients

  • Mixed greens
  • Cherry tomatoes
  • Green beans
  • Potatoes
  • Hard-boiled eggs
  • Tuna (canned or fresh)
  • Black olives
  • Red onion
  • Olive oil
  • Lemon juice
  • Dijon mustard
  • Salt
  • Pepper

Instructions

  1. Boil potatoes until tender, then chop and set aside.
  2. Blanch green beans in boiling water for a couple of minutes, then cool in ice water.
  3. Arrange mixed greens on a platter.
  4. Top with cherry tomatoes, chopped boiled potatoes, green beans, quartered hard-boiled eggs, tuna, black olives, and sliced red onion.
  5. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the vinaigrette.
  6. Drizzle the vinaigrette over the salad and toss lightly before serving.
