  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1 cup extra sharp cheddar cheese, shredded

Instructions

  1. Coat the chicken breasts evenly with the spices: chili powder, garlic powder, onion powder, crushed red pepper flakes, oregano, paprika, cumin, salt, and pepper.
  2. Heat a skillet over medium-high heat, add some oil, and sear the seasoned chicken breasts until golden brown and cooked through, about 6-8 minutes per side, depending on thickness.
  3. In a saucepan, melt butter over medium heat, then whisk in flour to create a roux, cooking until lightly golden.
  4. Gradually whisk in milk, cooking until thickened.
  5. Stir in salt, cayenne pepper, and paprika, then remove from heat and mix in shredded cheddar until melted and smooth.
  6. Serve the chicken hot, drizzling the cheese sauce over it and garnish with fresh parsley or cilantro.
