4 chicken breasts (2 lbs total)
6 tablespoons of olive oil
6 tablespoons of fresh lemon juice
6 large garlic cloves (minced)
6 tablespoons of fresh minced parsley
1 teaspoon paprika
1 ½ teaspoons of dried oregano
Salt and pepper to season
Instructions
In a large plastic food storage bag, combine olive oil, lemon juice, parsley, garlic, paprika, and oregano. Mix the ingredients thoroughly.
Make small slices on each chicken breast or pierce them with a fork. Generously season with salt and pepper on both sides.
Place the seasoned chicken in the plastic bag with the marinade. Seal the bag and mix the chicken with the marinade until evenly coated.
Refrigerate for a minimum of 20 minutes or up to two days for maximum flavor.
Preheat your grill to medium-high heat.
Remove the chicken from the bag and discard the excess marinade. Grill the chicken for 5-6 minutes on each side, or until cooked through with an internal temperature of at least 165 degrees.
Notes
For the best results, do not flip the chicken too frequently while grilling to retain juices and achieve smoky flavor.
