Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken breasts and sear until golden brown, about 5-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the cherry tomatoes and cook until soft.
  6. Stir in the heavy cream, chicken broth, garlic powder, and Italian seasoning, and bring to a simmer.
  7. Return the chicken to the skillet, spoon sauce over it, and sprinkle with Parmesan cheese.
  8. Cook for an additional 5-10 minutes until the chicken is cooked through and the sauce thickens.
  9. Garnish with fresh basil and serve.

Notes

Allow chicken to reach room temperature before cooking for even cooking. Adjust seasoning to your preference.
