A comforting yet sophisticated pasta dish featuring chicken in a rich and creamy sauce, with sun-dried tomatoes and parmesan.

Ingredients

  • 2 chicken breasts
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, and cook until golden brown, about 6-7 minutes per side. Remove from skillet and set aside.
  3. Add minced garlic to the skillet and sauté until fragrant.
  4. Stir in sun-dried tomatoes and heavy cream, mixing until combined.
  5. Spoon in parmesan cheese until melted and smooth.
  6. Slice the cooked chicken and return it to the skillet.
  7. Add the cooked pasta and toss everything together in the cream sauce.
  8. Garnish with fresh basil before serving.

Notes

For a richer sauce, adjust the amount of heavy cream. Pair with a light salad or garlic bread.
