  • 2 boneless, skinless chicken breasts
  • 8 ounces pasta (penne or fettuccine)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds.
  4. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, Italian seasoning, and Parmesan cheese. Cook for about 3-5 minutes until the sauce thickens.
  5. Slice the cooked chicken and return it to the skillet, combining it with the sauce.
  6. Add the cooked pasta, tossing to coat.
  7. Serve hot, garnished with fresh parsley.

Notes

For a twist, you can add vegetables like spinach or sun-dried tomatoes. Always check chicken temperature; it should reach 165°F.
