Juicy, bold-flavored chicken cooked sous vide in a simple marinade—perfectly done every time without overcooking.
2 chicken breasts, boneless and skinless
1 tablespoon honey
1 tablespoon chili powder
1 tablespoon lime juice
1 tablespoon olive oil
1 teaspoon molasses
1 teaspoon coriander
1 teaspoon salt
½ teaspoon garlic powder
1. Preheat the water bath to 150°F.
2. Combine honey, lime juice, olive oil, molasses, and all seasonings in a vacuum or zip-top bag.
3. Add chicken and massage to coat thoroughly.
4. Seal the bag using vacuum sealer or water displacement method.
5. Place in sous vide bath and cook for 1½ hours.
6. Let rest in the sealed bag for 10 minutes.
7. Remove from bag, slice, and serve as desired.
You can skip searing or give it a quick 60-second sear per side to build a light crust. Great for meal prep or slicing into salads.
