A healthy and satisfying low carb burrito bowl featuring ground chicken, cauliflower rice, and colorful vegetables.

Ingredients

  • 1 lb ground chicken
  • 2 cups cauliflower rice
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1/2 cup corn
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup shredded cheese (optional)
  • 1 avocado, diced
  • 2 tablespoons taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Cook the ground chicken in a large skillet over medium heat until browned and cooked through.
  2. Add taco seasoning and a splash of water, stirring until well combined.
  3. Stir in the cauliflower rice and cook for about 5-7 minutes until softened.
  4. Layer the cauliflower rice and chicken mixture in serving bowls.
  5. Top with diced bell peppers, tomatoes, corn, black beans, shredded cheese, and avocado.
  6. Garnish with fresh cilantro and serve with lime wedges.
