A creamy and cheesy loaded cauliflower and broccoli casserole, perfect as a side or main dish, featuring tender vegetables and a crispy top.

  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese (softened)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked bacon (crumbled)
  • 1/4 cup green onions (chopped)
  • 1/2 cup panko breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray.
  2. In a large pot, bring water to a boil. Chop cauliflower and broccoli into florets.
  3. Add florets to the boiling water and cook for 3-4 minutes until slightly tender. Drain and set aside.
  4. In a mixing bowl, combine cream cheese, sour cream, milk, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
  5. Stir in cauliflower, broccoli, bacon, and half of the cheddar cheese until evenly coated.
  6. Pour the mixture into the prepared baking dish. Top with remaining cheddar cheese and panko breadcrumbs.
  7. Bake for 25-30 minutes until bubbly and golden brown. Let cool before serving.
  8. Garnish with chopped green onions before serving.

Notes

For a more robust flavor, add a dash of hot sauce to the cheese mixture. Experiment with toppings like crushed crackers or seasoned cornflakes for crunch.
