  • 1/2 cup lemon juice
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons parsley, chopped
  • 1 tablespoon honey
  • Zest of 1 lemon
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons salt
  • 1 teaspoon chicken bouillon seasoning (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. In a small bowl, combine lemon juice, olive oil, parsley, honey, lemon zest, lemon pepper seasoning, red pepper flakes, garlic powder, onion powder, and salt. Mix until fully incorporated.
  3. Coat chicken thighs with the marinade, ensuring each piece is thoroughly covered. Marinate for at least 30 minutes, preferably overnight.
  4. Slice a lemon into thin rounds and place the slices on top of the chicken.
  5. Arrange chicken in a baking dish and bake for 35-40 minutes or until internal temperature reaches 165°F.
  6. Let chicken rest for 5 minutes before serving. Garnish with additional chopped parsley.

Notes

For added smokiness, consider adding a pinch of smoked paprika to the marinade. This dish pairs well with roasted vegetables or a fresh salad.
