  • 1/3 cup extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon honey
  • Zest of 1 lemon
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons salt
  • 1 teaspoon chicken bouillon seasoning (optional)

Instructions

  1. Combine lemon juice, olive oil, lemon zest, honey, garlic powder, onion powder, and spices to create your marinade.
  2. Coat the chicken thighs thoroughly in the marinade, ensuring they are well covered. Marinate for at least 30 minutes or overnight for maximum flavor.
  3. Slice a lemon and layer the slices on top of the marinated chicken to enhance the tartness.
  4. Place the chicken in the preheated oven and bake for 35-40 minutes, or until the chicken is fully cooked and the skin turns crispy.
  5. Allow the chicken to rest for 5 minutes before serving. Garnish with fresh parsley and enjoy hot.
