A bright and flavorful grilled chicken dish marinated with lemon juice, garlic, and fresh herbs.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • Juice of 2 fresh lemons
  • 4 garlic cloves, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, chopped thyme, parsley, salt, and pepper to create your marinade.
  2. Take the chicken breasts and place them into a resealable bag or bowl. Pour the marinade over the chicken and ensure each piece is well-coated.
  3. Seal the bag or cover the bowl and refrigerate for a minimum of 30 minutes. For enhanced flavor, marinate longer if time allows.
  4. Preheat your grill to medium-high heat (375°F) and lightly oil the grates to prevent sticking.
  5. Remove the chicken from the marinade and place it on the grill. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  6. Once cooked, let the chicken rest for about 5 minutes before slicing against the grain.

Notes

Consider pounding the chicken to an even thickness for uniform cooking. Use fresh herbs for a robust flavor.
