A vibrant and flavorful dish featuring tender chicken marinated in lemon and ginger, topped with a refreshing pineapple mango salsa.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tbsp fresh ginger, grated
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Diced pineapple
  • Diced mango
  • Diced red onion
  • Lime juice

Instructions

  1. In a mixing bowl, combine the grated ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper.
  2. Add the chicken pieces and mix until well coated. Allow them to marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat and add the marinated chicken.
  4. Cook for about 5-7 minutes or until the chicken is fully cooked, stirring occasionally.
  5. Prepare the salsa by combining diced pineapple, diced mango, diced red onion, and lime juice in a bowl.
  6. Remove the chicken from heat and let it rest for a few minutes before serving.
  7. Serve the Lemon Ginger Chicken topped with the Pineapple Mango Salsa.

Notes

For best results, ensure chicken is cooked to an internal temperature of 165°F. You can customize the salsa with your favorite fruits.
