This flavorful dish features juicy chicken thighs topped with a creamy Parmesan and garlic mixture, baked to crispy perfection.

  • 4 bone-in chicken thighs (trimmed)
  • 1/2 cup mayonnaise
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp garlic paste
  • 1 tsp kosher salt
  • 1 tsp blackening seasoning
  • 1 tsp smoked paprika
  • 1/2 lb baby Dutch potatoes (halved)
  • 1 tsp lemon zest (for garnish)
  • 1 tbsp fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. Arrange the baby Dutch potatoes in a baking dish in a single layer.
  3. Place the cleaned and trimmed chicken thighs on top of the potatoes.
  4. Season the chicken with blackening seasoning, kosher salt, and smoked paprika.
  5. In a bowl, combine mayonnaise, garlic paste, and Parmesan cheese; mix well.
  6. Spread the mayo mixture over the chicken thighs, mixing in the potatoes.
  7. Bake for 75 minutes until the chicken skin is crisp and juices run clear.
  8. Remove from oven, garnish with lemon zest and parsley before serving.

Notes

For crispy skin, pat the chicken dry before seasoning. Let rest after baking for improved juiciness.
