A vibrant and flavorful lemon and garlic Greek marinated chicken that turns ordinary meals into restaurant-quality dishes.

Ingredients

  • 1/2 cup extra-virgin olive oil
  • 1/3 cup lemon juice
  • 1 tablespoon fresh lemon zest
  • 6 large garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 23 pounds boneless, skinless chicken thighs

Instructions

  1. Whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, rosemary, thyme, sea salt, black pepper, and nutmeg if using.
  2. Add the chicken thighs to the marinade and coat them thoroughly.
  3. Allow the chicken to marinate in the refrigerator for at least 30 minutes.
  4. Remove the chicken from the refrigerator and let it come to room temperature.
  5. Heat olive oil in a skillet over medium-high heat.
  6. Add the chicken and cook for about 8-10 minutes on one side.
  7. Flip the chicken and continue cooking for another 10-12 minutes or until the internal temperature reaches 165°F (74°C).
  8. Allow the chicken to rest for a few minutes before serving.

Notes

For the best flavor, marinate the chicken overnight if possible and always rest the chicken after cooking.
