A delicious and simple combination of lemon, garlic, and chicken leg quarters, baked to perfection with crispy skin and heartwarming flavors.

  • 3½ pounds bone-in chicken (about 6 leg quarters)
  • 3 large potatoes (peeled and cut into chunks)
  • 1½ teaspoons garlic powder
  • 1½ teaspoons onion powder
  • 1½ teaspoons paprika
  • 1 teaspoon coriander powder
  • ½ teaspoon black pepper
  • 1½ teaspoons salt
  • ¼ teaspoon turmeric
  • 2 tablespoons extra virgin olive oil
  • 10 cloves garlic
  • ½ cup lemon juice
  • â…“ cup extra virgin olive oil
  • â…“ cup cold water
  • 1 teaspoon Aleppo pepper

Instructions

  1. Preheat your oven to 425°F. Clean and pat dry the chicken leg quarters and place them in a lined 9×13 pan.
  2. Add the peeled and cut potatoes around the chicken in the pan.
  3. In a separate bowl, mix together the garlic powder, onion powder, paprika, coriander, salt, black pepper, and turmeric.
  4. Sprinkle the spice mixture over the chicken and potatoes.
  5. Drizzle two tablespoons of extra virgin olive oil over the chicken and rub it in.
  6. Bake in the oven for 30 minutes, uncovered, until the chicken skin is crispy and golden brown.

Notes

Marinate the chicken with lemon juice and spices for a few hours or overnight for deeper flavors. For a crispy skin, broil for a few minutes at the end if needed.
