  • 2 chicken breasts, diced or left whole
  • 1 tablespoon olive oil (for chicken)
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon honey
  • 1 teaspoon chili flakes
  • 1 tablespoon lemon juice (for marinade)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 cup diced cucumber
  • ½ cup chopped cherry tomatoes or red bell pepper
  • 1 teaspoon lemon juice (for salad)
  • 1 tablespoon olive oil (for salad)

  • ½ cup hummus (homemade or store-bought)
  • 1 teaspoon olive oil (for hummus base)
  • ¼ teaspoon smoked paprika or chili powder

Instructions

  1. Start by prepping the ingredients. If preferred, dice the chicken or leave it whole. Mince the garlic and chop the cucumber, cherry tomatoes, and parsley.
  2. Next, marinate the chicken. In a bowl, mix together the olive oil, minced garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper. Add the chicken, ensuring each piece gets coated well with the marinade. Let it marinate for 20-30 minutes, or longer if possible.
  3. Preheat your grill to medium-high heat. If you opted for whole chicken breasts, grill each side for 5-7 minutes until thoroughly cooked. For diced chicken, utilize a grill basket or skewers, cooking for around 10-12 minutes, flipping halfway to achieve even grilling.
  4. While the chicken grills, prepare the cucumber salad. In a separate bowl, combine diced cucumber, cherry tomatoes or bell pepper, lemon juice, olive oil, and a sprinkle of salt. Toss well to coat.
  5. Once the chicken is grilled, it’s time to prepare the hummus base. Spread the hummus at the bottom of your serving bowl, drizzle with olive oil, and sprinkle with smoked paprika or chili powder.
  6. Finally, assemble your bowls. Layer the grilled chicken over the hummus, followed by the fresh cucumber salad, and finish with a garnish of chopped parsley.

Notes

For even better flavor, let the chicken marinate longer or use skewers for even cooking. Hummus can be store-bought for convenience.
