A flavorful Lemon Chicken dish with tender chicken thighs marinated in a zesty lemon and garlic marinade.

Ingredients

  • 4 chicken thighs
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken thighs to the marinade, coat well, and let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat the oven to 400°F (200°C).
  4. Place the marinated chicken thighs in a baking dish.
  5. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Serve warm, garnished with fresh herbs if desired.

Notes

For extra flavor, marinate the chicken longer and consider searing it before baking.
