  • 4 boneless, skinless chicken breasts
  • 1 can of artichoke hearts, drained and halved
  • 1 cup of pitted and halved olives (green or black)
  • 2 lemons (juice and zest)
  • 3 garlic cloves, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil over medium heat in a skillet.
  3. Season the chicken breasts with salt, pepper, and minced garlic.
  4. Sear the chicken in the skillet until browned on both sides, about 3-4 minutes per side.
  5. Transfer the chicken to a baking dish.
  6. Add artichokes, olives, lemon juice, and lemon zest to the same skillet and stir to combine.
  7. Pour the mixture over the chicken in the baking dish.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  9. Garnish with fresh parsley before serving.
