A creamy and spicy potato salad inspired by jalapeno poppers, perfect for gatherings.

  • 2 lbs small potatoes
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 4 jalapenos, seeded and diced
  • 2 green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut small potatoes in half and toss with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread potatoes evenly on a baking sheet and roast for 25-30 minutes until golden and crispy.
  4. In a bowl, mix together the softened cream cheese, sour cream, and mayonnaise until smooth.
  5. Once the potatoes are roasted, allow them to cool slightly. Combine in a large bowl with the cream cheese mixture, shredded cheddar cheese, diced jalapenos, and chopped green onions.
  6. Stir gently to combine and serve warm or chilled.

Notes

For a lighter version, reduce the amount of mayonnaise or sour cream. Experiment with additional toppings like crumbled bacon or fresh herbs.
