A flavorful salad combining tender chicken, crispy bacon, and spicy jalapeños for a satisfying dish.

Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • 5 strips of bacon
  • 3 jalapeños
  • 1/2 cup mayonnaise
  • 1/4 cup green onion
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions

  1. Place the chicken breasts in a medium-sized saucepan and cover with cold water until submerged by at least one inch. Bring the water to a boil, reduce the heat to low, cover, and simmer for 14 minutes. Remove from heat.
  2. Cook the bacon in a frying pan over medium-low heat until crispy.
  3. Deseed and slice the jalapeños into small strips. Sauté them in a separate frying pan with olive oil over medium heat until soft, about ten minutes, adding salt in the last minute.
  4. Once the bacon is crispy, drain and chop it into bite-sized pieces.
  5. In a small bowl, mix mayonnaise, green onion, onion powder, and garlic powder.
  6. Shred the chicken using two forks.
  7. In a large bowl, combine the shredded chicken, mayo mixture, sautéed jalapeños, and chopped bacon until evenly coated.

Notes

Consider using smoked bacon for a richer flavor; chill the salad for at least 30 minutes before serving for better flavor.
